CHOCOLATE COVERED APPLE “DONUTS” -
Ingredients:
2 Granny Smith apples
1 cup melted chocolate
2 tsp coconut oil
2-3 TBSP of peanut butter (for drizzling)
Handful of crushed walnuts (for topping)
Directions:
Slice apples from bottom to top, then remove the cores
Add chocolate and coconut oil to a bowl and melt
Dip apples into in melted chocolate then place on parchment paper
Top apples with a drizzle of peanut butter and top with crushed walnuts
Freeze for about 30-45 min, or until chocolate is melted and enjoy!
SUMMER SANDWICH -
Ingredients:
1 loaf of sourdough
Vegan (or regular) smoked gouda
Sliced turkey breast
1 tomato
1/2 avocado
1 head of iceberg lettuce
1red onion
1 apple
3-4 TBSP mayo
2 TBSP red wine vinegar
1 bunch of parsley
Directions:
Slice 1 loaf of sourdough and take out the bread in the middle (to make room for the filling of course)
Place a few slices of smoked gouda on the bread, and toast for about 5 minutes in the oven or air fryer, until the cheese is melted
Place down sliced of turkey, sliced tomatoes, and 1/2 avocado
Finely chop the iceberg lettuce, red onion, and apples and add to a bowl. Mix in chopped parsley, mayo, red wine vinegar, and mix thoroughly
Place in scoops on the sandwich and then top with the other half of sourdough and enjoy!
SWEET & SPICY SALMON TACOS -
Ingredients:
1 filet of salmon
Olive oil
Garlic powder
Smoked paprika
Cayenne pepper
Salt & pepper
1/2 head of cabbage
1 pineapple OR 1 mango
1 avocado
Cilantro (for topping)
Spicy mayo (for topping)
Tortillas
Directions:
Cur salmon into cubes & mix w olive oil, garlic powder, paprika, cayenne pepper, salt, & pepper (measure w ur heart <3)
Air-fry salmon at 400F for about 15 minutes or until cooked & crisp
Finely chop cabbage, dice the pineapple (or mango), and slice avocado
Heat up some tortillas & add the salmon to the tacos with chopped up cabbage, diced pineapple (or mango), avocado, & top with chopped cilantro
Top w spicy mayo & enjoy!!
CHOCOLATE RASPBERRY BITES -
Ingredients:
2 small packages of raspberries
1 cup thick yogurt
1 TBSP maple syrup (if using unsweetened yogurt)
1 package of chocolate chips
1 TBSP coconut oil
Directions:
Add all of the raspberries to a bowl and mash with a fork
Once mashed to your liking, mix in the yogurt and maple syrup (if using)
Scoop into bite sized pieces and place on a flat cutting board or baking sheet topped with parchment paper
Freeze for 2 hours or until the yogurt has hardened
Combine the chocolate chips and coconut oil in a bowl and place in the microwave in 30 second increments until the chocolate is fully melted (stir between each increment)
Dip each raspberry/yogurt bite into the chocolate and place back on the parchment paper
Place in freezer again for about 15 minutes, or until the chocolate has hardened and enjoy!
