Hi cuties!! How are we?? I am currently neck deep in Love Island right now and it is all I can think about. I even had a dream last night that Thomas (my husband) and I were a couple on Love Island lmaooo. Is it slightly concerning that it’s made its way into my dreams? Probably, but it’s just so juicy I cannot look away. And it feels like the world is falling apart at the moment anyway, so Love Island quite literally feels like the only saving grace right now 😀 MOVING ON, I know I say this LITERALLY every single week, but wow. I really do think that this week’s recipes are some of the best… maybe ever? What’s in this week’s picnic basket: (full recipes and grocery list are below)

Pistachio Gelato -

MAKE TIME: 6 hours | SERVINGS: 3-4 | VEGAN, DAIRY FREE, GLUTEN FREE

Ingredients:

  • 1 1/2 cups of raw unshelled pistachios

  • (optional) 1 tsp olive oil

  • 1 cup coconut milk

  • 1 cup coconut cream

  • 1/3 cup + 2 TBSP maple syrup

  • 1 tsp vanilla extract

  • 1/8 tsp salt

  • + 1-2 TBSP chopped pistachios (for topping)

Directions:

  1. Add 1 1/2 cups raw unshelled pistachios to a food processor and blend until it makes pistachio butter. This takes about 10 minutes, I also stop the food processor and scrape down the sides every minute or so

  2. (Optional) If needed, add 1 tsp of oil to the pistachios to help with blending

  3. Once the pistachios have turned into pistachio butter, to the food processor add the coconut milk, coconut cream, 1/3 cup maple syrup, vanilla extract, and salt

  4. Blend until fully smooth. Taste the mixture and if you want it any sweeter, add in 2 TBSP maple syrup and blend again

  5. Once smooth, transfer the mixture to a bread tin and freeze for at least 5-6 hours

  6. Top with chopped pistachios when serving and enjoy!!

Stuffed Onions -

MAKE TIME: 1.5 hours | SERVINGS: 2 | VEGAN, DAIRY FREE, GLUTEN FREE

Ingredients:

  • 6 onions

  • 1 red bell pepper

  • 1 tomato
