wait should i meal prep?
these recipes might turn me
I am meal prep’s number 1 hater… solely because I am lazy. For some reason, spending 1-2 hours making food for the week seems hard, but I will gladly spend 3+ hours making a dish that I plan to enjoy right then and there (I know it makes no sense). But as soon as I am meal prepping for somebody else, I am more than happy to spend all day in the kitchen if needed. And that is exactly what happened! My sister-in-law just had a baby, so I decided to make as many meals as I could. I figured that if I had just given birth, the last thing I would want to do is cook. I made breakfast, dinner, and dessert (of course). Here’s the menu:

Grab-N-Go Breakfast Sandwiches



MAKE TIME: 30 minutes | SERVINGS: 12 sandwiches | (optional) GLUTEN & DAIRY FREE |
Instructions:
12 eggs
2 TBSP unsweetened milk
1 tsp garlic powder
1 tsp salt
1/2 tsp paprika
1/2 tsp black pepper
12 sausage patties
12 slices of cheese (can use dairy free or regular)
12 english muffins (these work great for gluten free: Gluten Free English Muffins)
Directions:
Add 12 eggs to a large bowl, then add in the milk, seasonings, and whisk until fully combined
Transfer the eggs to a greased 9x13 baking dish. Bake the eggs at 325F for 20-23 minutes, until the middle is cooked
Place 12 sausage patties on a large baking sheet and bake for 20 minutes, flipping halfway (I add them to the oven with the eggs, on the bottom rack)
Once the eggs are done cooking, use a butter knife to slice the eggs into 12 squares
Slice 12 english muffins in half. To each english muffin add an egg square, a cooked sausage patty, a slice of cheese, and then top with the other english muffin slice
Do this with all of the ingredients, to make 12 sandwiches
Wrap the sandwiches tightly in parchment paper. Save in the fridge for up to a week, or freeze for a month!
If eating right away, place in the oven for 5 minutes at 350F then enjoy!
Reheating Instructions:
To reheat when frozen, wrap the sandwich in aluminum foil and bake at 350F for 30 minutes

I know my strengths and baking is not one of them lol. Sadly this recipe is not gluten and dairy free, so I have never actually tried these. But I have made them maybe 10 times for the people in my life and it is always a crowd pleaser. I would trust Mariam’s recipes with my life, so I know these are GOOOD. Anyways go make them hehe <3
